Ingredients and amounts
- Strawberry syrup: to taste
- 500g strawberries
- 45g granulated sugar
- 1g vanilla extract
- 1g salt
- Ice cream base: to taste
- 5g vanilla extract
- 1g salt
- 6g heavy cream
- 400g sweetened condensed milk
Step-by-step method
Step 1
First, make the strawberry syrup. Wash the strawberries and remove the green tops. Cut the strawberries into 5mm pieces. Reserve half of the chopped strawberries to fold into the ice cream later.
Step 2
Place the other half of the chopped strawberries and the sugar into a saucepan. Cook over medium heat, stirring, until the strawberries release their liquid and a syrup forms in the pan.
Step 3
Let the strawberries heat in the syrup, stirring occasionally, until they break down and the syrup thickens slightly.
Step 4
The syrup is ready when it holds its shape for 3 seconds after being drizzled. Remove the syrup from the heat and stir in the vanilla and salt. Set aside to cool.
Step 5
While the syrup cools, prepare the ice cream base. In a bowl, combine the sweetened condensed milk, heavy cream, vanilla extract, and salt. Whip the mixture with a hand mixer until light, fluffy, and soft peaks form.
Step 6
Fold the reserved chopped fresh strawberries into the ice cream base. Transfer the ice cream base to a freezer-safe container. Drizzle the cooled strawberry syrup over the ice cream and gently swirl it in.
Step 7
Cover the ice cream and freeze for eight hours before scooping and serving.
