Ingredients and amounts
- Green chili peppers: 2 (about 200g total)
- Potatoes: 2 (about 300g total)
- Pork: 200g
- Scallion: 1 stalk (about 10g)
- Ginger: 1 piece (about 5g)
- Garlic: 3 cloves (about 12g)
- Salt: 7g
- Soy sauce: 6-10ml
- Cooking oil: 10-15ml
- Potato starch: 5g
- Water: 15g
Step-by-step method
Step 1
Remove the stems and seeds from the green chilies and cut into small pieces. Peel the potatoes and slice into 2mm thick rounds. Slice the pork into 4mm thick pieces. Cut the scallion into 3mm pieces. Smash and mince the ginger and garlic. Mix the potato starch with 15g water to make a slurry.
Step 2
Heat oil in a wok over high heat until 70% hot. Add the pork slices and stir-fry until no longer pink. Add about 3ml of soy sauce and stir until the meat is evenly colored. Add about 2g of salt.
Step 3
Reduce the heat to 50% and add the scallion, ginger, and garlic. Stir-fry for 5 seconds. Add the potato slices, increase heat to 70%, and stir-fry evenly. Add about 5ml of soy sauce and 2g of salt. Cook until the potatoes are just done and slightly golden on the edges.
Step 4
Increase heat to 80% and add the green chilies. Stir-fry vigorously over high heat until you see white smoke (wok hei). Continue stirring for 1 minute until the chilies are colored. Finally, pour the starch slurry around the edges of the wok, reduce heat to 40%, and stir to thicken.
Step 5
Once the sauce appears glossy and thickened, turn off the heat and transfer to a serving plate.
