Ingredients and amounts

  • 500g pork tenderloin
  • 10g vinegar
  • 30g white sugar
  • 50g starch
  • 50g egg (about 1 egg)
  • 10ml light soy sauce
  • 20g cooking wine
  • 10g oyster sauce
  • 30ml ketchup
  • 5g white pepper powder
  • 10g salt

Step-by-step method

  1. Step 1

Marinate the meat: Cut the pork tenderloin into thick slices, pound lightly with the back of a knife to tenderize, then cut into finger-thick strips. Add cooking wine, light soy sauce, oyster sauce, salt, white pepper powder, and one egg. Mix well with your hands and marinate for at least 20 minutes.

  2. Step 2

Make the sauce: Mix ketchup, 10g vinegar, 30g sugar, and 150ml water. Stir until the sugar dissolves. Set aside.

  3. Step 3

Coat the meat: Prepare a large bowl with starch. Coat each strip of meat thoroughly with starch. It is best to coat all strips before frying to avoid rushing.

  4. Step 4

First fry: Heat oil to 160°C. Test by inserting a dry chopstick; if small bubbles form around it, the oil is ready. Fry the pork strips until the surface turns light yellow. Maintain medium heat throughout.

  5. Step 5

Second fry: Increase oil temperature to 200°C. Return the pork strips to the oil and fry for 40 seconds until the coating is very crispy. Remove immediately.

  6. Step 6

Coat with sauce: In a separate wok, add a little oil. Pour in the prepared sauce and bring to a boil until bubbling. Add the fried pork strips and stir-fry to coat each piece evenly.

  7. Step 7

Stir-fry the coated pork strips briefly, then turn off the heat and transfer to a plate.
