Ingredients and amounts
- 2 eggs per serving
- 200ml water per serving
- 10 dried shrimp per serving (optional)
- 5g scallion per serving (optional)
- 3g salt per serving
- soy sauce, to taste (optional)
- 1ml sesame oil (optional)
Step-by-step method
Step 1
Crack the eggs into a microwave-safe ceramic bowl and beat them with chopsticks.
Step 2
Add water and salt, and stir until well combined.
Step 3
Add the dried shrimp and stir to ensure they are evenly distributed and not clumped together.
Step 4
Finely chop the scallion into pieces about 0.6±3mm in size, then add to the bowl and stir.
Step 5
Cover the bowl with plastic wrap or a microwave-safe ceramic lid (do not seal tightly; leave room for expansion) and microwave at 500W for 2 minutes.
Step 6
Carefully remove the plastic wrap or cover, then continue microwaving for another 2 minutes.
Step 7
If your microwave does not have a rotating turntable, slowly rotate the bowl 180 degrees horizontally to ensure even heating.
Step 8
Add sesame oil.
Step 9
Carefully remove the bowl from the microwave (it will be very hot).
Step 10
If using soy sauce, pour it over the surface of the custard so it forms a thin, even layer.
Step 11
Enjoy the egg custard happily.
