Ingredients and amounts

  • 1 yellow catfish (or sand goby), cleaned
  • 100g tofu
  • 1 scallion
  • 1 piece ginger
  • 3-5g white pepper powder
  • 15ml cooking oil
  • 10-15g salt
  • 1L boiling water
  • 15ml cooking wine (for marinating)

Step-by-step method

  1. Step 1

Clean the fish thoroughly, especially the blood lines inside the belly to remove fishy smell. Place in a bowl, add cooking wine, 10g sliced ginger, and 5g salt. Marinate for 15 minutes.

  2. Step 2

Cut the tofu into cubes, soak in cold water for 5 minutes, then drain and set aside.

  3. Step 3

Before frying, rub the pan with a slice of ginger to prevent sticking. Add oil (15ml per fish). Heat the oil, then fry the fish for 2-3 minutes, shaking the pan occasionally to prevent sticking. Flip the fish once.

  4. Step 4

Once all fish are fried, pour in boiling water, 5ml cooking wine, and ginger slices. Turn the heat from low to high, cover the pot, and boil vigorously for 10 minutes. Make sure to add enough water as some will evaporate.

  5. Step 5

When the soup turns white, add the tofu. Reduce to medium heat and cook for another 5 minutes. Season with 10g salt and 3g white pepper. Garnish with chopped scallions and serve.
