Ingredients and amounts
- 250g fresh choy sum
- 10g cooking oil
- 5g light soy sauce
- 5g oyster sauce
- 5g salt and sugar
- 4-5 cloves garlic
- 1-2 bird's eye chilies
Step-by-step method
Step 1
Wash the choy sum and trim off the tough root ends. Use a knife to scrape the outer layer of the stems for a tender texture.
Step 2
Mince the garlic. Optionally add some chopped onion.
Step 3
Prepare the sauce: mix 5g light soy sauce, 5g oyster sauce, 3g sugar, and 100ml water in a bowl.
Step 4
Bring 500ml water to a boil with 5g salt and 10g cooking oil.
Step 5
Blanch the choy sum stems in the boiling water for 1 minute until dark green, then add the whole leaves and cook for another 1 minute. Drain and arrange on a plate.
Step 6
In a separate small pan, heat a little oil over medium heat. Add half the minced garlic, a pinch of ginger shreds, and chopped bird's eye chili. Stir briefly until fragrant.
Step 7
Pour the prepared sauce into the pan and bring to a simmer. Cook for about 10 seconds until slightly thickened.
Step 8
Pour the sauce over the choy sum. Ensure plenty of garlic is included.
