Ingredients and amounts

  • Scallions 100g
  • Cooking oil 100ml
  • Light soy sauce 60ml
  • Dark soy sauce 20ml
  • White sugar 15g
  • Dried noodles 80g (equivalent to about 150g fresh noodles)
  • Scallion oil sauce 15ml

Step-by-step method

  1. Step 1

Wash the scallions and cut into long sections (about 5-7 cm). The white and green parts can be separated.

  2. Step 2

Add 100ml of cooking oil to a wok and heat over medium heat. First, add the white parts of the scallions and fry until slightly yellow.

  3. Step 3

Add the green parts of the scallions, reduce the heat to low, and continue frying.

  4. Step 4

Keep the heat low and patiently fry for about 15-20 minutes until the scallions become crispy and golden brown.

  5. Step 5

Remove the crispy scallions (keep the oil in the wok).

  6. Step 6

To the scallion oil in the wok, add 60ml light soy sauce, 20ml dark soy sauce, and 15g white sugar. Heat over low heat and stir for about 1 minute until the sugar dissolves and the sauce is well combined. Turn off the heat immediately. Pour the prepared scallion oil sauce into a container, let it cool, and seal for storage.

  7. Step 7

    Take 80g of dried noodles.

  8. Step 8

Add 1000ml of drinking water to a pot and bring to a boil over high heat.

  9. Step 9

Add the noodles and cook according to the package instructions until done (usually 3-8 minutes, follow the package directions).

  10. Step 10

Drain the cooked noodles and place them in a bowl.

  11. Step 11

Add 15ml of the prepared scallion oil sauce to the bowl of noodles.

  12. Step 12

Optionally, add the previously fried scallion pieces.

  13. Step 13

Mix quickly and thoroughly with chopsticks, then serve.
