Ingredients and amounts
- Cold cooked rice (to taste)
- Eggs (1.5 per serving, rounded down to 1)
- Ham (to taste, 2 pieces per serving)
- Cucumber (optional, to taste, 30g per serving)
- Carrot (optional, to taste, 30g per serving)
- Oil (to taste, 12ml per serving)
- Salt (to taste, 4g to 6g per serving)
- White pepper (to taste, 8g per serving)
- Scallion (to taste, 1 stalk per serving)
- Light soy sauce (to taste, 10ml per serving)
Step-by-step method
Step 1
Break up the cold rice into small clumps with a spatula in advance.
Step 2
Slice or dice the ham, carrot, and cucumber as desired.
Step 3
If you have cooked meat at home, prepare it for better flavor.
Step 4
Separate the egg whites and yolks into two large bowls and whisk each separately. Do not add salt at this step.
Step 5
Heat the pan over high heat until it smokes, add cooking oil, then add the egg whites. Once the whites are mostly set, remove and set aside.
Step 6
If there is enough oil left, add the egg yolks directly. If not, add more oil and heat over high heat.
Step 7
When the yolks are mostly set, reduce the heat to medium-low, add the ham, cooked meat, carrot, cucumber, and other prepared ingredients; stir-fry for 10 seconds until fragrant.
Step 8
Add the cooked egg whites back in, stir-fry for 5 seconds, then quickly add the rice and stir-fry over high heat to coat each grain of rice with egg.
Step 9
During stir-frying, break up any clumps of rice. This step may take a while; continue until all rice is broken up and evenly mixed.
Step 10
Reduce the heat to low, add salt, white pepper, and light soy sauce.
Step 11
Stir-fry further until evenly mixed. The rice is ready when some grains start to 'jump' in the pan.
Step 12
Finally, add the chopped scallion and stir-fry for another 10 seconds.
Step 13
Turn off the heat and transfer to a bowl.
