Ingredients and amounts

  • 300g fresh noodles
  • 100g pork belly
  • 150g green beans
  • 2g salt
  • 10-18ml cooking oil
  • 2g chicken bouillon
  • 10ml light soy sauce
  • 5g oyster sauce
  • 1g thirteen-spice powder
  • 5ml dark soy sauce
  • 1g MSG
  • 150ml hot water
  • 10g scallion
  • 5g ginger
  • 10g garlic

Step-by-step method

  1. Step 1

Cut the green beans into 5-6cm pieces.

  2. Step 2

Cut the scallion into 1-2cm pieces.

  3. Step 3

    Cut the ginger into thin strips about 1mm x 1mm x 3cm.

  4. Step 4

Crush the garlic with the flat of a knife, then mince to about 1mm pieces.

  5. Step 5

Slice the pork belly into pieces about 2mm thick.

  6. Step 6

Heat the wok until all moisture evaporates. Hold your hand about 10cm above the wok; it should feel noticeably hot.

  7. Step 7

Add the measured cooking oil. Hold the wok handle and tilt it to coat the lower two-thirds of the wok surface with oil.

  8. Step 8

Add all the ginger and scallion pieces and stir-fry for 5 seconds until fragrant. (Caution: oil may splatter; wear gloves or take precautions.)

  9. Step 9

Add all the pork slices. Let them sit for 5 seconds without stirring, then stir-fry until all the meat is coated with oil.

  10. Step 10

Continue stir-frying the pork until all pieces have changed color. Drizzle the light soy sauce along the edge of the wok and stir-fry evenly.

  11. Step 11

Add the salt, dark soy sauce, oyster sauce, thirteen-spice powder, chicken bouillon, and all the green beans. Stir-fry for 2 minutes.

  12. Step 12

    Add the hot water.

  13. Step 13

When the water boils, use a ladle to scoop out half of the liquid from the wok. Be careful not to scoop out any solids.

  14. Step 14

Spread all the noodles evenly over the top of the vegetables and meat.

  15. Step 15

Cover the wok and simmer over medium heat for 5 minutes.

  16. Step 16

Uncover and use a ladle to drizzle the reserved liquid evenly over the noodles, one ladleful at a time.

  17. Step 17

Cover again and simmer over medium heat for 3 minutes.

  18. Step 18

Uncover and sprinkle all the minced garlic and MSG evenly over the top.

  19. Step 19

Use chopsticks to toss everything together, mixing the noodles, vegetables, and meat evenly.

  20. Step 20

    Turn off the heat.
