Ingredients and amounts

  • 200g taro (preferably Lipu variety)
  • 30g white sugar
  • 15g water

Step-by-step method

  1. Step 1

Cut the taro into thick strips (slightly larger to prevent breaking during stir-frying).

  2. Step 2

Add enough oil to submerge the taro. Heat the oil until bubbles form when a chopstick is inserted.

  3. Step 3

Fry the taro strips until they float and turn slightly golden, easily pierced with a chopstick.

  4. Step 4

Reserve the frying oil for later use in stir-fries.

  5. Step 5

Combine sugar (30g) and water (15g) in a 2:1 ratio. Heat until bubbles form without changing color.

  6. Step 6

Add chopped scallions and fried taro. Turn off the heat and stir-fry until the sugar crystallizes into a white coating as it cools.

  7. Step 7

    Plate and serve.
