Ingredients and amounts
- 400g skin-on pork belly
- 30g red fermented tofu (about 2 pieces)
- 15ml fermented tofu liquid
- 25g rock sugar
- 5ml dark soy sauce
- 15ml cooking wine
- 15g white scallion segments
- 5g chopped scallions
- 10g ginger
- 500ml water
- 10ml cooking oil
Step-by-step method
Step 1
Cut the pork belly into 2.5 cm cubes.
Step 2
Place the pork in cold water with cooking wine and ginger slices. Bring to a boil over medium heat, then remove the pork.
Step 3
Mash the red fermented tofu and its liquid into a paste. Mix in the rock sugar and dark soy sauce to form a sauce.
Step 4
Heat oil in a pan over high heat. Sauté the scallion segments and ginger until fragrant. Add the pork cubes and stir-fry until golden brown.
Step 5
Pour in the fermented tofu sauce and stir well. Add hot water, then cover and simmer.
Step 6
Simmer over low heat for 40 minutes.
Step 7
Increase the heat to high to reduce the sauce. Turn off the heat when the sauce is thick and bubbling with large bubbles.
