Ingredients and amounts

  • 1 mud crab (approx. 300g)
  • 15g curry block (1 small piece)
  • 100ml coconut milk
  • 1 egg
  • 200g onion
  • 5 cloves garlic
  • Cornstarch (for coating)
  • 30ml cooking oil
  • 300ml boiling water

Step-by-step method

  1. Step 1

Remove the crab shell and cut the crab in half. Lightly crack the claws with the back of a knife. Dust the cut surfaces and claws with a little cornstarch. Sprinkle 5g cornstarch into the shell to cover the roe. Set aside.

  2. Step 2

Finely chop the onion and set aside.

  3. Step 3

Finely chop the garlic and set aside.

  4. Step 4

Boil a kettle of water and set aside.

  5. Step 5

Heat oil in a wok, add about 20ml cooking oil, and wait 10 seconds for the oil to heat up.

  6. Step 6

Place the crab cut-side down in the wok and fry for 20 seconds to seal the roe and meat. Flip and fry each side for 10 seconds. Remove the crab and set aside.

  7. Step 7

Place the crab shell in the wok, spoon hot oil over the roe inside the shell, and fry for 20 seconds. Remove and set aside.

  8. Step 8

Without cleaning the wok, add another 10ml oil and heat over high heat until slightly smoking. Add the minced garlic and chopped onion, stir-fry for 10 seconds.

  9. Step 9

Add the curry block and stir until melted (about 10 seconds). Add the fried crab and stir-fry to coat evenly.

  10. Step 10

Pour in 300ml boiling water, cover, and simmer for 3 minutes.

  11. Step 11

After simmering, add the coconut milk and egg white. Turn off the heat and stir continuously until the sauce thickens.

  12. Step 12

    Serve.
