Ingredients and amounts

  • 2-3 Argentine red shrimp
  • 5g sea salt
  • Ground black pepper to taste
  • 20ml white wine
  • 1ml light soy sauce
  • 3 cilantro leaves
  • 1 lemon slice
  • 10g onion
  • 10g ginger
  • 10g garlic

Step-by-step method

  1. Step 1

Thaw the Argentine red shrimp, preferably by transferring from the freezer to the refrigerator a day in advance for natural thawing to preserve flavor and texture. Pre-deveined and butterflied shrimp save time.

  2. Step 2

Rinse the thawed shrimp, pat dry thoroughly, and set aside. Ensure they are completely dry; use paper towels if needed.

  3. Step 3

Slice the ginger, dice the onion into small cubes, wash the cilantro and separate leaves from stems, chop the cilantro leaves, and press and mince the garlic.

  4. Step 4

Heat a pan over high heat, then add 2 tablespoons of olive oil. Once hot, add the ginger slices, onion cubes, and cilantro stems, and stir-fry.

  5. Step 5

After about 1 minute, remove and discard the ginger, onion, and cilantro stems.

  6. Step 6

Reduce to medium-high heat, add the shrimp, and sear. Ensure each shrimp makes full contact with the pan. Sear for about 2 minutes, brushing each shrimp with oil.

  7. Step 7

When the bottom shell is slightly golden, flip the shrimp, sprinkle with minced garlic, and gently shake the pan for even heating.

  8. Step 8

After about 1 minute, add 20ml of white wine.

  9. Step 9

After another minute, reduce to medium-low heat and evenly sprinkle with salt and black pepper.

  10. Step 10

Add 1 drop of light soy sauce to each shrimp.

  11. Step 11

Sprinkle with cilantro leaves and plate.

  12. Step 12

Slice the lemon and arrange on the side of the plate.
