Ingredients and amounts
- Beef: 100g per serving (adjust based on number of diners and wok capacity)
- Onion: 1/12 per serving (e.g., for 3 people, use about 1/4 of an onion)
- Bell pepper: 1/12 per serving (e.g., for 3 people, use about 1/4 of a bell pepper)
- Salt: 1g per serving
- Cornstarch: 3g per serving
- Black pepper marinade: to taste, follow package instructions for proportions
- Black pepper powder: 1g per serving (approximately, to taste)
- Peanut oil: 10ml per serving (adjust proportionally if changing the amount of beef)
Step-by-step method
Step 1
Cut the beef into strips, ideally no longer than 8cm, about 5-10mm thick, and about 1cm wide (measurements are flexible).
Step 2
Marinate the beef with the black pepper marinade. Mix well and let rest. Follow the package instructions for the amount and time; you can extend the time but not shorten it.
Step 3
If using a liquid marinade, sprinkle a layer of black pepper powder 3 minutes before the marinating time ends. Then add cornstarch, mix well again, and let rest for 20 minutes.
Step 4
Turn on the heat, heat the wok, and add peanut oil.
Step 5
When you see a wisp of smoke rising from the oil, add the beef and stir-fry.
Step 6
Stir-fry over medium-high heat for 2 minutes until the outside of the beef changes color (no obvious pink spots; pink spots indicate insufficient stir-frying). Be careful of oil splatter.
Step 7
Add the onion and bell pepper, and stir-fry for 2 minutes.
Step 8
Add salt and another sprinkle of black pepper powder. Stir-fry for 30 seconds until well combined.
Step 9
Once the onion has softened, turn off the heat, remove from the wok, and plate.
