Ingredients and amounts
- 500g pork belly
- 30g rock sugar
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp cooking wine
- 2 star anise
- 1 small piece cinnamon stick
- 3 slices ginger
- 2 scallions
Step-by-step method
Step 1
Cut the pork belly into 3 cm cubes. Blanch in cold water with cooking wine for 3 minutes, then drain and rinse off any scum.
Step 2
Heat a little oil in a wok over low heat. Add rock sugar and stir constantly until it melts and turns a deep red color.
Step 3
Add the pork belly cubes and stir-fry until each piece is evenly coated with the caramelized sugar.
Step 4
Add ginger slices, scallion segments, star anise, and cinnamon stick. Stir-fry until fragrant.
Step 5
Pour in cooking wine, light soy sauce, and dark soy sauce. Stir-fry to color the meat evenly.
Step 6
Add enough hot water to just cover the meat. Bring to a boil over high heat, then reduce to low heat and simmer for 40 minutes.
Step 7
Remove the lid and increase the heat to reduce the sauce until it thickens and glazes the meat.
