Ingredients and amounts

  • Cucumber: 100g
  • Pork (lean): 50g
  • Cooking oil: 50g
  • Salt: 10g
  • Soy sauce: 5g
  • Garlic: 2 cloves
  • Bird's eye chili: 1

Step-by-step method

  1. Step 1

Slice the lean pork into thin pieces. Place in a bowl, add 10g cooking oil and soy sauce, mix well, and marinate for 10 minutes.

  2. Step 2

Cut off 5cm from both ends of the cucumber. Slice the remaining part diagonally into 0.5cm thick slices.

  3. Step 3

Place the cucumber slices in a bowl, sprinkle with 8g salt, mix well, and let sit for 5 minutes.

  4. Step 4

Peel the garlic cloves, crush them flat, and mince. Set aside.

  5. Step 5

Remove the stem from the bird's eye chili and cut into 0.5cm rings.

  6. Step 6

Heat a wok, add 40g oil. When the oil begins to smoke, add the minced garlic and chili rings and stir-fry 5 times.

  7. Step 7

Add the marinated pork and stir-fry until the meat is cooked and changes color.

  8. Step 8

Add the cucumber, 2g salt, and stir-fry over high heat for 30 seconds. Serve immediately.

  9. Step 9

If you cannot maintain high heat, the cucumber may be slightly undercooked. Consider increasing the stir-fry time to 50 seconds.
