Ingredients and amounts

  • 500g carrots (about 5-6 medium)
  • 500ml whole milk
  • 80g sugar (adjust to taste, 60g-100g)
  • 40g ghee
  • 3g cardamom powder
  • 15g cashews
  • 15g almonds
  • 15g raisins

Step-by-step method

  1. Step 1

Peel the carrots and grate them into fine shreds.

  2. Step 2

In a heavy-bottomed pan, melt 20g of ghee over medium heat.

  3. Step 3

Add the grated carrots and stir-fry for 3-5 minutes until they soften and become fragrant.

  4. Step 4

Pour in 500ml of whole milk and stir well.

  5. Step 5

Bring to a boil over high heat, then reduce to medium-low heat, maintaining a gentle simmer.

  6. Step 6

Stir continuously for 25-30 minutes until the milk is almost completely absorbed by the carrots. This is the most critical step; stir constantly to prevent burning.

  7. Step 7

When there is almost no liquid left, add 80g of sugar and mix well.

  8. Step 8

The mixture will release liquid again after adding sugar. Continue to stir-fry over medium-low heat for 5-8 minutes until the liquid evaporates again.

  9. Step 9

Add the remaining 20g of ghee and 3g of cardamom powder, and stir-fry for 2 minutes.

  10. Step 10

In a separate small pan, fry the cashews, almond slices, and raisins in a little ghee until golden, about 1 minute. Note that the raisins will puff up.

  11. Step 11

Mix half of the fried nuts and raisins into the carrot halwa.

  12. Step 12

Plate the halwa and garnish with the remaining nuts and raisins on top.
