Ingredients and amounts

  • 650 g chicken (preferably free-range), cut into pieces
  • 50 ml cooking oil (preferably tea seed oil or rapeseed oil)
  • 250 g ginger, sliced
  • 250 ml beer
  • 20 ml light soy sauce
  • 10 ml dark soy sauce
  • 3 g salt
  • 0-5 small chili peppers (0-50 g), adjust to taste
  • 0-5 long red chili peppers (0-50 g), or substitute with small chili peppers
  • 5 pickled chili peppers (50 g)
  • 50 g garlic (about 3 heads), minced

Step-by-step method

  1. Step 1

Cut the chicken into 1 cm pieces, rinse, drain, then marinate with light soy sauce and cooking wine for 30 minutes.

  2. Step 2

Heat the wok until it just starts to smoke, add the oil, and wait 5 seconds.

  3. Step 3

Add the ginger slices and stir-fry over medium heat for 30 seconds.

  4. Step 4

Add the chicken pieces and stir-fry for 3 minutes until the moisture evaporates and the chicken releases its oil.

  5. Step 5

Add the chopped chili peppers and garlic, along with salt and dark soy sauce, and continue stir-frying for 30 seconds.

  6. Step 6

Pour in the beer, reduce to medium-low heat, and simmer covered for 2 minutes.

  7. Step 7

Increase to high heat to reduce the sauce, then transfer to a plate.
