Ingredients and amounts
- 4 pieces pork loin chops (about 360 g)
- 1 egg (50 g)
- 1 g salt
- 10 g salt and pepper powder
- 100 ml ginger-scallion water
- 80 g all-purpose flour
- 80 g cornstarch
- 2-3 g custard powder (for color and aroma, optional)
- 10 g water
- 10 g oil
Step-by-step method
Step 1
Wash the pork chops, remove the bones, pound with a knife blade to flatten, then cut into thick slices and then into thick strips.
Step 2
Add salt and pepper powder, mix well. When the meat becomes sticky, gradually add the ginger-scallion water. Refrigerate and marinate for 20 minutes.
Step 3
Prepare the batter. Mix 80 g flour, 20 g cornstarch (reserve the remaining 60 g), 2-3 g custard powder, and 1 g salt.
Step 4
Crack in the egg and stir. Gradually add 100 g water, then 10 g oil, stirring repeatedly until the batter is smooth and slightly thick.
Step 5
Take the remaining 60 g cornstarch. Coat each pork strip with cornstarch, then dip into the batter.
Step 6
Add oil to a wok (enough to submerge the strips) and heat to about 150-160°C. Fry the strips until light golden, then remove. Do not move them immediately after adding to prevent sticking; once set, use chopsticks to turn and separate.
Step 7
Reheat the oil to 150-160°C, then fry the strips again until golden brown. Remove.
Step 8
Sprinkle with salt and pepper powder, toss to coat evenly, and serve.
