Ingredients and amounts

  • 350 g frozen corn kernels (bagged)
  • 40-70 g cornstarch (enough to fully coat the kernels)
  • 10 g salt and pepper powder
  • 10 g sesame seeds

Step-by-step method

  1. Step 1

Thaw the corn kernels by soaking in warm water for 15 minutes or boiling in water for 5 minutes.

  2. Step 2

Place a tray (Box A) lined with paper towels. Pour the thawed corn kernels onto it.

  3. Step 3

Shake the tray vigorously until the paper towels are completely wet.

  4. Step 4

Place a second tray (Box B) lined with fresh paper towels. Transfer the corn from Box A to Box B.

  5. Step 5

Shake vigorously again until the paper towels are wet.

  6. Step 6

Repeat the process until the corn kernels are moist but have no visible water droplets on the surface.

  7. Step 7

Add a generous amount of cornstarch to the corn, enough to fully cover all kernels.

  8. Step 8

Shake the tray until the corn kernels are evenly coated with starch.

  9. Step 9

Heat a wok or pan over the stove. Add enough oil to cover the bottom, but not too much.

  10. Step 10

When the oil is hot (about 80% of its smoke point), add the coated corn kernels.

  11. Step 11

Pan-fry over medium heat for 30 seconds without stirring to prevent the starch from falling off.

  12. Step 12

Gently stir-fry for 3 minutes, then remove from the wok.

  13. Step 13

The most important step: sprinkle with 3 g of salt and pepper powder and the sesame seeds.

  14. Step 14

    Serve immediately.
