Ingredients and amounts

  • Giant river prawns, 500g
  • Butter, 20g
  • Wasabi, 15g
  • Sugar, 3g
  • Light soy sauce, 30g
  • Oyster sauce, 30g
  • Salt, 3g
  • Cooking wine, rum, or beer, 15-30g
  • Cilantro, 5 sprigs (cut into segments)
  • Garlic, 5 cloves (minced)

Step-by-step method

  1. Step 1

Trim the prawns: cut off the sharp head and tail spikes, antennae, and legs. Cut open the back with scissors and remove the vein.

  2. Step 2

Prepare the wasabi sauce: Mix light soy sauce, oyster sauce, wasabi, salt, and sugar until well combined.

  3. Step 3

Wash the cilantro and cut into segments. Set aside.

  4. Step 4

Drain the prawns. Add oil to a pan, place the prawns in directly, and fry over medium heat until the shells are golden. Remove.

  5. Step 5

Add the minced garlic to the pan with the remaining oil over high heat. When white smoke appears and the garlic is fragrant, return the prawns to the pan and add the butter. Stir to coat the prawns in the butter.

  6. Step 6

Pour in the prepared sauce and continue boiling over high heat, stirring the prawns, until the sauce reduces. Add the alcohol (30g for cooking wine or beer, 15g for rum).

  7. Step 7

When the sauce has slightly reduced, add the cilantro, stir a couple of times, and remove from heat.
