Ingredients and amounts
- Giant river prawns, 250g
- Garlic, 1-2 cloves
- Wasabi, 20g (for sauce)
- Cornstarch, 10g (for sauce)
- Light soy sauce, 30g (for sauce)
- White pepper, 5g (for sauce)
- Sugar, 3g (for sauce)
- Oyster sauce, 15g (for sauce)
- Salt, 3g (for sauce)
- Bird's eye chili, 1-2
- Butter, 20g
- Cooking oil, 80ml
Step-by-step method
Step 1
Cut the prawns open along the back, remove the vein and sand sac. Alternatively, cut from the belly for a more attractive presentation when fried.
Step 2
Rinse the prawns in clean water, drain well. Optionally dust with cornstarch.
Step 3
Mince 2 garlic cloves.
Step 4
Prepare the sauce: Mix light soy sauce, oyster sauce, sugar, white pepper, salt, and wasabi to taste. Add water to dilute, then stir in cornstarch until dissolved.
Step 5
Heat cooking oil in a pan, enough to cover the bottom.
Step 6
Add the drained prawns and fry slowly.
Step 7
Once the prawn oil is released (indicated by many bubbles), add the minced garlic and bird's eye chili.
Step 8
When the garlic is fragrant, add the butter.
Step 9
Once the butter melts, stir well, then pour in the prepared sauce.
Step 10
Cover and simmer for 2 minutes until the sauce thickens, then remove from heat.
