Ingredients and amounts

  • 10-12 chicken wings
  • 500ml cola
  • 10g sugar
  • 15g light soy sauce
  • 3g dark soy sauce
  • 2g salt
  • 2 slices ginger
  • 20ml cooking wine
  • 1 scallion knot

Step-by-step method

  1. Step 1

Place chicken wings in a pot and cover with cold water. Add 1 slice ginger and 10-20ml cooking wine. Bring to a boil over high heat (about 2 minutes). Skim off foam and drain.

  2. Step 2

For fresh chicken wings, skip blanching and proceed to marinate directly.

  3. Step 3

Drain the chicken wings. Make 2 slits on each side. Marinate with about 10g light soy sauce for 10 minutes (enough to coat the surface).

  4. Step 4

Over low heat, heat oil in the pan. Fry the remaining ginger slices until fragrant. Add the marinated chicken wings. Fry until golden brown on both sides. Stir with a spatula 4-5 times to prevent sticking.

  5. Step 5

Once golden, pour in cola to cover the wings. Bring to a boil over high heat. Skim off any dark foam. Add the scallion knot.

  6. Step 6

Season with 2g salt, 10g sugar, and 3g light soy sauce. Add 3g dark soy sauce for color if desired.

  7. Step 7

When the scallion knot turns yellow, remove it and the ginger slices. Reduce to medium heat and continue simmering.

  8. Step 8

When the cola reduces to a syrupy consistency, reduce to low heat and coat the wings evenly. Remove from heat, plate, and serve.
