Ingredients and amounts

  • 3 green peppers (per serving)
  • 200 g pork (per serving)
  • 3 g salt (per serving)
  • 3 ml light soy sauce (per serving)
  • 3 ml oyster sauce (per serving)
  • 5 g garlic (per serving)
  • 5 g ginger (per serving)
  • 2 ml soy sauce (per serving)
  • 3 g fermented black beans (per serving)

Step-by-step method

  1. Step 1

Wash the green peppers, remove the stems and seeds, then cut into bite-sized pieces using a rolling cut technique.

  2. Step 2

Smash the garlic cloves with a knife, then slice crosswise. Mince the ginger.

  3. Step 3

Slice the pork against the grain (cut perpendicular to the muscle fibers so the slices show a '川' pattern).

  4. Step 4

Wash the sliced pork, place in a bowl, add the calculated amounts of light soy sauce, oyster sauce, and salt, mix well, and marinate for 10 minutes.

  5. Step 5

Heat a wok without oil. Add the green peppers and dry-fry over high heat until they develop a charred skin. Add 2 g salt and stir-fry for another minute, then remove.

  6. Step 6

Without washing the wok, heat it over high heat. Add 8 ml of oil per serving, wait 30 seconds, then add the garlic slices and minced ginger. Stir-fry for 15 seconds.

  7. Step 7

Add the marinated pork and stir-fry for 2 minutes. Then add the dry-fried green peppers and stir-fry for 1 minute.

  8. Step 8

Add the fermented black beans according to taste, then add the soy sauce and stir-fry for another 30 seconds.

  9. Step 9

    Remove from heat and plate.
