Ingredients and amounts
- 400g all-purpose flour
- 130ml hot water (80°C)
- 130ml cold water
Step-by-step method
Step 1
Place 400g flour in a bowl. Pour cold water over one half and hot water over the other half. Stir into flaky pieces, then knead into a dough. Cover with plastic wrap and rest for 40 minutes.
Step 2
10 minutes before the resting time ends, prepare the oil pastry (hot oil pastry works better) as described in the tips.
Step 3
Do not knead the rested dough. Gently press it down, then cut into four equal pieces with one horizontal and one vertical cut.
Step 4
Roll each piece into a ball, then roll out into a circle roughly the size of your electric griddle. Spread 1/4 of the oil pastry evenly over the surface.
Step 5
Cut a slit along the radius of the circle, then roll it from the outer edge into a cone shape. Pinch the tip of the cone closed to prevent the oil pastry from leaking.
Step 6
Press down on the tip of the cone to flatten it, then roll it out again into a circle roughly the size of the electric griddle (about 3mm thick).
Step 7
Preheat the electric griddle and brush with cold oil. Place the rolled-out flatbread on the griddle, brush the top with oil to seal in moisture, and cover with the lid.
Step 8
Cook over high heat for 1 minute, then flip the flatbread and cook for another 1 minute.
Step 9
Repeat the process until all flatbreads are cooked.
