Ingredients and amounts

  • 3 pig trotters
  • 200g white kidney beans
  • 2g angelica root
  • 5g white pepper powder
  • 30g ginger slices
  • 2g angelica root
  • 8g minced garlic
  • 2g chicken bouillon
  • 25g light soy sauce
  • 10g chopped scallions

Step-by-step method

  1. Step 1

Soak 200g white kidney beans in water overnight and set aside.

  2. Step 2

Prepare the front pig trotters. Ask the butcher to split them in half. Use a blowtorch to remove hair follicles, then wash at home.

  3. Step 3

In a pot of cold water, add the trotters, scallion sections, ginger slices, and cooking wine. Blanch for 10 minutes, skim off the foam, then remove and rinse clean.

  4. Step 4

Place the trotters, angelica root, white pepper powder, and ginger slices in a pressure cooker. Cook under pressure for 30 minutes. Add the white kidney beans and cook for another 10 minutes. The broth should be milky white. If adding water during cooking, use only hot water.

  5. Step 5

After opening the lid, season with salt, chicken bouillon, and chopped scallions.

  6. Step 6

Prepare the dipping sauce: mix scallions, garlic, chili peppers, white pepper powder, light soy sauce, vinegar, chili oil, Sichuan pepper oil, and some of the trotter broth.

  7. Step 7

Pour the dipping sauce over the trotters and serve.
