Ingredients and amounts

  • 250g rice noodles (soak in 50°C warm water for 30 minutes)
  • 50g pork
  • 50g pickled bamboo shoots
  • 15g chopped chili peppers (adjust to taste)
  • 30g fermented black beans
  • 10g garlic
  • 10-20ml cooking wine
  • 15ml light soy sauce
  • 5g sugar (optional)
  • 5ml rice vinegar
  • 5ml salt
  • 15ml oil
  • 15ml cornstarch
  • 10ml white pepper powder

Step-by-step method

  1. Step 1

Marinate all the pork with cooking wine, salt, light soy sauce, cornstarch, and white pepper powder in a bowl. Set aside.

  2. Step 2

Heat a dry pan (no oil) and add all the pickled bamboo shoots. Dry-fry until the moisture evaporates, then push them to the side, leaving a space in the center.

  3. Step 3

Add 10-15ml cooking oil, all the garlic, chopped chili peppers, and fermented black beans into the center of the pan. Stir-fry until fragrant.

  4. Step 4

Add all the marinated pork and 10ml light soy sauce. Stir-fry for 1 minute.

  5. Step 5

Add 5ml rice vinegar, 10ml light soy sauce, and 450ml water. Bring to a boil.

  6. Step 6

Once boiling, add the warm-soaked rice noodles and cook for 3 minutes. Serve in a bowl.
