Ingredients and amounts

  • Century eggs: 2
  • Green chili peppers: 4 (10-15cm long, 2-4cm wide)
  • Scallion: about 10cm (preferably green part)
  • Garlic: 3-4 cloves
  • Cooking oil: 10-20ml
  • Light soy sauce: 15-20ml
  • Aged vinegar: 15-20ml
  • Sugar: 6-10g
  • Sesame oil: 5-7ml
  • Bird's eye chili: 3-4

Step-by-step method

  1. Step 1

Wash the green chilies, remove the stems, cut them open lengthwise, remove the seeds, and flatten them on a cutting board. Set aside. (Removing seeds is essential to prevent splattering in the pan.)

  2. Step 2

Cut the scallion into 0.5cm pieces. Set aside.

  3. Step 3

Peel and finely mince the garlic. Set aside.

  4. Step 4

Peel the century eggs. Set aside.

  5. Step 5

Cut the bird's eye chilies into 5-10mm pieces. Set aside.

  6. Step 6

Heat a pan and add 10-20ml of cooking oil.

  7. Step 7

Add all the green chilies. Reduce the heat to low and pan-fry until they become soft (test by piercing with a chopstick; it should go through easily).

  8. Step 8

Turn off the heat. Transfer the century eggs and green chilies to a small metal bowl.

  9. Step 9

Method 1 (if you have a rolling pin and won't disturb neighbors): Use the end of a rolling pin to pound the century eggs and chilies together in the bowl until well combined.

  10. Step 10

Method 2: Tear the green chilies into roughly 0.5cm strips and use a fork to mash the century eggs.

  11. Step 11

    Add the bird's eye chilies.

  12. Step 12

Add the light soy sauce, aged vinegar, sugar, sesame oil, and any remaining prepared ingredients.

  13. Step 13

    Mix everything evenly and serve.
