Ingredients and amounts

  • 300 g liangpi per person (rounded down)
  • 30 g sesame paste per person (rounded down)
  • 100 g cucumber per person, 50 g mung bean sprouts per person

Step-by-step method

  1. Step 1

Add 500 ml of water to a pot and bring to a boil.

  2. Step 2

Add mung bean sprouts to the pot and boil over high heat for 60 seconds. Remove the sprouts, rinse with cold water, and set aside on a plate.

  3. Step 3

Julienne the cucumber and set aside on a plate.

  4. Step 4

Peel 10 g of garlic cloves, place in a mortar with 1 g of salt, pound into a paste, add 10 g of tap water, and set aside.

  5. Step 5

Note: Store-bought liangpi usually has cooking oil on the surface; rinse with tap water if desired. Do the same for the gluten.

  6. Step 6

Note: After rinsing the gluten, squeeze out excess water by hand (do not squeeze too hard).

  7. Step 7

Prepare a small bowl and add 3 g salt, 2 g chicken bouillon, 5 g light soy sauce, 1 g dark soy sauce, 1 g sesame oil, 2 g oyster sauce, and 5 g black vinegar (salt and vinegar can be adjusted to taste).

  8. Step 8

Add 25-35 g warm water to the bowl (adjust to taste), stir with chopsticks to dissolve, and let cool.

  9. Step 9

Note: The following measurements are for one person; multiply by n for n people.

  10. Step 10

Take a small bowl and add the prepared sesame paste.

  11. Step 11

    Add 4 g salt, 3 g chicken bouillon, 5 g light soy sauce, 1 g dark soy sauce, and 3 g oyster sauce.

  12. Step 12

Stir the seasonings into the sesame paste with chopsticks.

  13. Step 13

Add 10 g of water and stir to combine.

  14. Step 14

Repeat the previous step 2-3 times (adjust based on desired thickness of the sesame paste).

  15. Step 15

Take a prepared bowl and add the prepared liangpi.

  16. Step 16

Pour the salted water over the liangpi, mix with chopsticks, then transfer to a small bowl (including the salted water).

  17. Step 17

Place the bean sprouts on top of the liangpi, then add the gluten.

  18. Step 18

Pour the prepared sesame paste over the gluten.

  19. Step 19

    Sprinkle cucumber shreds on top.

  20. Step 20

    Add chili oil if desired.

  21. Step 21

The homemade liangpi is ready to serve!
