Ingredients and amounts
- 150 g pork tenderloin
- 6 stalks garlic chives
- 300 ml cooking oil
- 50 g scallion, ginger, and garlic
- 20 ml light soy sauce
- 10 g salt
- 1 egg
- 10 g starch
- 20 g wood ear mushrooms
- 100 g onion
- 20 g other seasonings
Step-by-step method
Step 1
Soak the wood ear mushrooms in advance. Use hot water if in a hurry.
Step 2
Slice the pork tenderloin and place in a bowl. Add 20 ml light soy sauce, cooking wine, and ground Sichuan pepper. Crack in one egg and mix well with your hands. Add starch (sweet potato starch recommended) and mix. Pour in 300 ml cooking oil to seal the coating. Marinate for 15 minutes.
Step 3
Cut the garlic chives into 3 cm sections. Cut the onion into diamond-shaped pieces. Set aside.
Step 4
Heat a generous amount of oil in a wok to 50% heat. Add the marinated pork slices, break them apart, then remove and drain the oil.
Step 5
Pour out the excess oil from the wok, leaving 10 ml. Heat the oil to 70% heat.
Step 6
Add the scallion, ginger, and garlic and stir-fry until fragrant. First, add the garlic chives and stir-fry until just cooked. Then add the wood ear mushrooms and onion. Add light soy sauce and ground Sichuan pepper. Stir-fry a few times, then add the previously fried pork slices and stir-fry together.
Step 7
Add 10 g salt. Just before removing from the wok, add 10 ml vinegar and chicken bouillon powder. Transfer to a plate and serve.
