Ingredients and amounts

  • 250g fresh water spinach
  • Half a garlic bulb, minced
  • 45ml cooking oil
  • 2g salt
  • 3g sugar
  • 8ml light soy sauce

Step-by-step method

  1. Step 1

Wash the water spinach, remove any rotten leaves or tough stems, and cut into 2 or 3 even sections to prevent overly long pieces.

  2. Step 2

Add a small amount of oil to the pan and heat until it just starts to smoke. Swirl the pan to coat the bottom evenly, then add the remaining oil (cold oil in hot pan method).

  3. Step 3

Add the minced garlic and stir-fry over low heat for 10-15 seconds until fragrant.

  4. Step 4

Quickly add the water spinach evenly. Turn the heat to high. Use a spatula in one hand and chopsticks in the other to continuously toss the spinach until it wilts and turns green.

  5. Step 5

Switch to using only the spatula and stir-fry the wilted spinach quickly for 15-20 seconds to ensure even heating. Sprinkle in 2g salt, 3g sugar, and 8ml light soy sauce.

  6. Step 6

Continue stir-frying over high heat for 10 seconds, then serve immediately.
