Ingredients and amounts

  • Eggs (2, about 100 g egg liquid)
  • Warm water or broth (100-120 ml, 1.0-1.2 times the volume of egg liquid)
  • Salt (1 g)
  • Light soy sauce (2 ml, optional)
  • Sesame oil (a few drops, for serving)

Step-by-step method

  1. Step 1

Beat the eggs, add warm water/broth, salt, and light soy sauce. Stir gently to combine, trying not to create bubbles.

  2. Step 2

Strain the egg mixture through a sieve into a heat-resistant bowl. If there are bubbles on the surface, gently poke them with a toothpick.

  3. Step 3

Cover with plastic wrap and poke 8-10 small holes, or use a microwave-safe lid (leave a gap).

  4. Step 4

Place in the microwave and heat:

  5. Step 5

At 700W: 1 minute 30 seconds, then check and heat for another 20-30 seconds until the surface is just set.

  6. Step 6

    At 600W: about 1 minute 40 seconds to 2 minutes 10 seconds.

  7. Step 7

    At 800W: about 1 minute 10 seconds to 1 minute 40 seconds.

  8. Step 8

After heating, let it rest for 1 minute to allow residual heat to fully cook the center.

  9. Step 9

Drizzle with sesame oil and sprinkle with chopped scallions before serving.
