Ingredients and amounts
- 500 g pork
- 2 eggs
- 30 g all-purpose flour
- 120 g sweet potato starch
- 20 g old ginger
- 15 g scallions
- 15 g cooking wine
- 80 g water
- 4 g salt
- 2 g thirteen-spice powder
- 3 g white pepper powder
- 5 g MSG
- 5 g chicken bouillon powder
- 3 g crushed Sichuan peppercorns
- 3 g whole Sichuan peppercorns
- 8 g light soy sauce
Step-by-step method
Step 1
Julienne the old ginger. Do not cut the scallions.
Step 2
Combine the cooking wine and water.
Step 3
Use your hands to squeeze and rub the ginger and scallions in the liquid for 5 minutes to release their flavor into the water.
Step 4
Remove the skin from the pork and wash it.
Step 5
Cut the pork into strips 8-10 cm long and 1.5 cm thick.
Step 6
Add salt, thirteen-spice powder, white pepper powder, MSG, chicken bouillon powder, crushed Sichuan peppercorns, whole Sichuan peppercorns, and light soy sauce.
Step 7
Pour in the prepared ginger-scallion water.
Step 8
Mix well and knead thoroughly for 10 minutes until the meat absorbs all the liquid and becomes sticky.
Step 9
Cover with plastic wrap and refrigerate for 30 minutes.
Step 10
Add the flour and sweet potato starch to the marinated meat, then add the egg whites.
Step 11
Knead thoroughly for 15 minutes.
Step 12
Pour vegetable oil into a wok. The oil level should be at least 3 cm deep.
Step 13
Heat the oil over high heat to 150°C, then reduce to low heat to maintain the temperature.
Step 14
Use chopsticks to place the coated pork strips into the oil. Fry for 3-5 minutes until set and lightly golden. The strips should feel slightly firm when turned with a spatula.
Step 15
Remove and drain the oil.
Step 16
Increase the oil temperature to 180°C. Return the first-fried strips and fry until golden brown. Remove and drain.
