Ingredients and amounts

  • 500 g cold cooked rice
  • 2-3 eggs
  • 10-15 frozen peeled and deveined shrimp
  • 150 g canned luncheon meat (recommended: Shanghai Maling brand, half a 340 g can)
  • 30 g green peas
  • 30 g carrot
  • 30 g corn kernels
  • 1 scallion
  • 30-40 ml oil
  • 12-15 g salt

Step-by-step method

  1. Step 1

Dice the carrot into 0.2 cm cubes.

  2. Step 2

Dice the luncheon meat into 0.2 cm cubes.

  3. Step 3

Separate the scallion into white and green parts. Cut each into 0.25-0.5 cm pieces and set aside separately.

  4. Step 4

Beat the eggs in a bowl and set aside.

  5. Step 5

Boil the carrot, peas, and corn until cooked. Drain and set aside. Reserve the water.

  6. Step 6

Boil the shrimp until cooked. Drain and set aside. Discard the water.

  7. Step 7

Heat the wok over high heat and add oil.

  8. Step 8

Add 20-30 ml oil to the wok. When the oil is hot, slowly pour in the beaten eggs in a thin stream (about 0.5 cm wide). Do not stir.

  9. Step 9

Once the eggs are set, immediately remove and set aside.

  10. Step 10

Stir-fry the luncheon meat, peas, carrot, corn, and shrimp for 1-2 minutes. Remove and set aside.

  11. Step 11

Rinse the wok with water to remove any residue. The wok can have oil but no solid bits.

  12. Step 12

Heat the wok with 10 ml oil. Add the white scallion pieces and fry until fragrant.

  13. Step 13

Reduce to low heat (turn off the heat for 1-2 minutes if the oil is too hot). Add the rice. Use a spatula to press and stir-fry the rice until each grain is coated with oil and separated.

  14. Step 14

Add the cooked eggs. Continue pressing and stir-frying to break the eggs into small pieces and mix evenly with the rice.

  15. Step 15

Increase to high heat. Add all the reserved ingredients. Stir-fry quickly for 1-2 minutes.

  16. Step 16

Sprinkle in the salt and stir-fry until well combined.

  17. Step 17

Add the green scallion pieces and stir-fry for 1 minute.

  18. Step 18

Turn off the heat and serve.
