Ingredients and amounts

  • 500-800g pork ribs
  • 1 corn on the cob (more if desired)
  • 1 carrot (more if desired)
  • 1/2 leek
  • 1 scallion
  • 10 ml cooking oil
  • 4g black pepper
  • 10ml cooking wine
  • 10ml vinegar
  • 10-15g salt (adjust based on final soup volume)
  • 1000 ml boiling water

Step-by-step method

  1. Step 1

Cut the leek into 3-4 cm sections and lightly crush with the back of a knife.

  2. Step 2

Cut the corn into small chunks.

  3. Step 3

Cut the carrot into rolling knife cuts.

  4. Step 4

Peel and slice the ginger into large pieces.

  5. Step 5

Cut the fresh pork ribs into small pieces.

  6. Step 6

Place the ribs in cold water, add leek, ginger, and cooking wine, and blanch. Bring to a boil over high heat, skim off the foam, then remove the ribs and drain.

  7. Step 7

Heat the pan with cold oil, add the sliced ginger and ribs, and stir-fry until the ribs are lightly browned. Add vinegar (to help tenderize the meat) and stir-fry for another minute.

  8. Step 8

Pour in boiling water all at once (do not add more later) and bring to a boil over high heat.

  9. Step 9

Add the corn first, add pepper, cover, and simmer on low heat for 20 minutes. Then add the carrot, cover, and continue simmering on low heat for 40 minutes.

  10. Step 10

Season simply: three minutes before finishing, add only salt. Finally, sprinkle with chopped scallions.
