Ingredients and amounts
- 2 medium celery stalks, to taste
- 350g pork belly
- 500g fresh noodles
- 10cm scallion
- 5 cloves garlic
- 20g ginger slices
- 2 green bell peppers
- 3 dried red chilies
- 20 Sichuan peppercorns
- 10g salt
- 5g five-spice powder
- 15ml light soy sauce
- 10ml dark soy sauce
Step-by-step method
Step 1
Remove the skin from the pork belly and slice into 2cm x 6cm x 0.5cm pieces.
Step 2
Remove celery leaves and the bottom 2cm of the stalks. Halve lengthwise and cut into 2cm segments.
Step 3
Mince the garlic, slice the scallion into 0.2cm rounds, and julienne the ginger.
Step 4
Heat a wok until smoking, add 3ml oil to coat, then discard the oil.
Step 5
Add fresh oil, then add the pork slices, scallion, ginger, garlic, and dried red chilies. Stir-fry for 1 minute, stirring constantly.
Step 6
Add cooking wine, light soy sauce, and dark soy sauce. Stir-fry for another 1 minute.
Step 7
Add 500ml hot water. Cover and simmer for 3 minutes.
Step 8
Add the celery and green bell peppers. Season with salt and five-spice powder. Cover and simmer for another 3 minutes, then turn off the heat.
Step 9
Add 1000ml water to a steamer and bring to a boil. Spread the noodles flat on a steamer tray and steam for 15 minutes.
Step 10
Remove the steamed noodles and use chopsticks and your hands to loosen them on a cutting board. Let cool to room temperature.
Step 11
Transfer the noodles to the wok with the braised vegetables. Mix using chopsticks in one hand and a spatula in the other, turning the vegetables over the noodles until evenly coated with sauce.
Step 12
Return the mixed noodles to the steamer tray and steam for another 10 minutes. Turn off the heat.
