RECIPE NOTES

A recipe should help a new cook get dinner onto the table

Reading a recipe and getting dinner onto the table are different things. We put quantities, finish checks, rescue tips, and safety notes together so there is less guesswork at the stove.

What each recipe page explains

  1. 01

    Start with everyday dishes

We begin with home dishes that new cooks make often and get stuck on, so the page can help with dinner tonight.

  2. 02

Write steps you can follow at the stove

We give quantities, prep time, cook time, actions, heat cues, and finish checks instead of vague instructions such as “season to taste” or “cook through.”

  3. 03

Explain the places people get stuck

We cover common problems such as sticking, excess water, oversalting, and undercooking, including what to try first and when not to keep rescuing the dish.

  4. 04

    Ground safety notes in sources

When a page mentions temperature, storage, allergens, or cross-contamination, it cites government or professional guidance. A cooking preference is not presented as a safety conclusion.

  5. 05

    Keep the page current

Each page shows its update date and editing notes. If you run into a problem or have a better method, tell us and we will check it before updating the page.

Update notes you will see on a page

NoteWhat it means
Editorially checkedWe have reviewed the quantities, steps, and wording so the recipe is ready to use as a reference.
Kitchen-testedThe published version has been cooked from start to finish, with timing, heat, or step adjustments recorded.
Updated from feedbackA reported issue was reproducible, and the page notes the update date and main change.

Food safety sources

Our basic guidance follows public food-safety advice from China’s National Health Commission, including separating raw and cooked foods and cooking meat and eggs thoroughly.

When a measurable temperature is needed, we cite the USDA Food Safety and Inspection Service chart and name the relevant food and measuring point.
